    I have been making this recipe for a couple years now. I actually do it a little different though. I just throw all the ingredients in the Crockpot in the morning and its ready when we get home around 6:00. The flavor is unbelievable! It’s a family favorite.

    I have been eating Cajun food my whole life but this recipe beats any jambalaya I have ever eaten. I have been serving it for guests for almost a year now and without exception I have never had leftovers. This is the best jambalaya I have ever enjoyed. My guest and I thank you so much. This has become the favorite meal to be served at least once a month for our family home evenings.

    I expected this to be good given all the 5-star reviews, but there was definitely something missing from this recipe. I could taste plenty of spice, but it lacked any depth or complexity. I would next time try boiling the rice separately in chicken broth and then folding everything together (it took forever to get the rice moist. I also added a little tomato paste and mesquite for flavoring, which seemed to help a bit.

    So very flavorful! Really easy to prepare too. I prepped during the day to make for friends coming for dinner. It was easy to do and still gave me time to sit and talk while it was cooking. I did cheat a little and bought pre-cooked shrimp which I threw in at the very last minute. This is a keeper!

    I first made this recipe in march if 2008. I marinated the chicken in a mildly spicey mustard sauce overnight (cottens bbq. I used publix hot italian sausage & I marinated the shrimp in teriyaki sauce and pepper flakes. I didnt need all the water & rice (Its good when thick & my pot wasnt big enough anyway. This was by far the best meal to ever come out of my dutch oven since my mother retired it and passed it down to me. The left-overs were put in a pie tin & covered with puff pastrey & baked till golden. It was another bit hit with everyone who tried it. I cant wait to make it again.

    This has been my go-to jambalaya recipe for years. I have found a chipotle powder that I include in my spice mix as well. For the person that said it tasted too much like thyme...when he calls for chopped thyme leaves, that amount is for fresh. Using 1.5 tablespoons of dried thyme leaves would indeed impart too much thyme flavor to this dish. If its not hot, be more liberal with your seasonings and find a spicier andouille

    i usually LOVE emeril's recipes, but this was a very expensive disaster! i followed the recipe to the letter and the results were not true to the 5 star comments i read. the flavor of thyme was overwhelming and there was no heat whatsoever. not a good way to spend my time and money today ;-(
