Cooked this Jambalaya for a lunch gathering and it was fabulous! Everybody raved about how delicious it was. Added a tossed salad and garlic bread and it was on! Thanks Emeril!

This is such a great recipe...it's got just the right amount of spice, and it makes a lot (as in, some to freeze for later!. I use smoked sausage because it's difficult to find andouille sometimes.

Made with no substitutions to the recipe except the Creole seasoning (used one that had been given me and I only used thighs instead of whole chicken. The flavor of this recipe is fantastic. It has excellent depth, and the flavors meld together perfectly. It had QUITE a kick to it - but I believe that was my own doing - I think I used around 1/4-1/3 cup of the creole seasoning for the shrimp and chicken.

I made it a little too spicy (added a few too many adobo peppers but it still was really good! I definately will try it again

Ok I made this - and it was great. There are a couple of things I changed though. I used 3 whole peppers (green red and orange for color. I used spicy sausage, and more chicken - about 4 large chicken breasts cubed. It was great, and its even better the next day. Oh and I also used more rice then the recipe called for. It turned out wonderful.

This recipe is certainly time consuming, but the finished product is FABULOUS!!! My kids even love it and my sister always asks me when I'm making Jambalaya. My advice is to prepare the day before - cut veggies, cook chicken and sausage. That way you can cut your preparation time in half!
