Ingredients

  • 1 cup raisins
  • 2 sticks unsalted butter, softened
  • 2 cups light brown sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • Pinch grated nutmeg
  • 1/4 cup buttermilk
  • 2 cups quick-cooking oats (not instant or old-fashioned)
  • 3/4 cup chopped toasted pecans
  • 3/4 cup white chocolate chips

Directions

Preheat the oven to 350 degrees F. Lightly grease 2 large baking sheets and set aside.

Place the raisins in a medium bowl and cover with boiling water. Let sit until plump and moist, 15 to 20 minutes. Drain well.

In a large bowl, with an electric mixer cream the butter and sugar until fluffy. Add the vanilla extract and eggs, and beat to combine.

Into a medium bowl, sift together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Stir into the butter mixture, and add the buttermilk, stirring to mix. Fold in the oatmeal, raisins, nuts, and chips, blending well.

Drop the dough onto the baking sheets by rounded tablespoons, spacing them 2 inches apart. Bake for 10 to 12 minutes.

Let cool on the sheets for 5 minutes, then transfer to wire racks to cool.

    Should have read the reviews first, I too ended up with one big, runny cookie on my first sheet. Added just shy of another... cup of flour to the dough, and the rest were very moist and tasty. Read more

    I am not a baker (my sister is), but I will cook up a storm. I made these cookies a week before the holidays and by the time... Santa was on his sleigh I had to make 2 more batches. I have to admit, I left out the chocolate & the nuts, so I had an old fashion oatmeal cookie that I could not keep in the cookie jar. I would suggest as someone else did to use a teaspoon instead of a tablespoon to drop them. This batter is somewhat loose and it really spreads. If you want 1BIG cookie then use the tablespoon, but if you want everyone to have 3 or 4 I highly suggest using a teaspoon :-)...so enjoy.Read more

    How on earth could a professional chef allow such a mess of a recipe to represent him on the Internet? I followed this... recipe precisely; what resulted was a rather tasty mess of flat, thin, stick-to-the-baking sheet cookies, I ended up throwing them into the trash. It's really too bad because I had intended to take them to a charity fund raiser this evening - no way! I have no idea how anyone else could say that the recipe was anything above poor. Obviously, Emeril has not attempted this recipe himself; or, he omitted some critical step from the process. I have tried many, many other Food Network recipes, but I must say that this is the worst.Read more

    i've made this recipe twice with same problem each time. the cookies spread out so thin, you can't get them off the cookie... sheet and the crumble into a mess. i'm a professional cook and love Emeril's recipes but he fell asleep at the wheel on this one. I added more flour, put batter in freezer, and all these tricks do help. but after looking at the reviews, i'm relieved to know it's not just me. don't use this recipe! find another!Read more
