    I changed this recipe by doubling the amount of Emeril's essence in the crust and substituted monk fish for the crawfish. The added essence kicked the recipe another notch.

    but takes some time. I've made this for brunch several times a year. Started subsituting the crawfish with chorizo - and people love it. Very, very good.

    This is a hearty quiche full of flavor. It is a little time consuming so I use premade pie dough and roll in the seasoning. This is not just a breakfast meal though. I like to make if for dinner.

    I love crawfish and this recipe was a great variation on the standard quiche. Turned out beautiful and was restraunt quality.
