    Well this is a keeper in our book. The taste is out of this world, and I would
    highly recommend it to anyone. We have started to use Emeril's S.W. Essence
    and Baby Bam to other things we cook. WELL DONE EMERIL, BAM BAM!

    The best chili recipe I've come across! I would recommend Negra Modelo or another dark lager...I think Guinness would be a bit too much for this recipe.

    JUST TYPE IN "EMERIL'S ESSENCE" ON THIS SITE...YOU WILL THEN FIND THE RECIPE FOR THE ESSENCE....IT IS THE SAME THING THAT IS IN THE ESSENCE BOTTLE EXCEPT ITS NOT IN THE BOTTLE BUT IT IS THE SAME THING THAT IS IN THE BOTTLE. HOPE THIS HELPS HELPS...

    This chili is awesome! I use Newcastle Brown Ale for the beer and limit the chocolate to one 60 calorie Hersey's stick, Extra Dark. The bitterness of the chocolate really helps to balance the rest of the flavors in this dish.

    I just had a taste of my chili and it is bitter. I don't know what went wrong! I used Guiness beer. What should I do???

    This was my first attempt at chili and I'm looking forward to trying again. I made this for a company chili cook off for Leap Year '08 so didn't want the same ol' chili that I figured others would bring. This dish was met with mostly very positive review with everyone curious what they were tasting. I used Guiness Extra Stout for the beer and some baking chocolate we had from Christmas fudge. I think this chili would be sensitive to different beers since it is such a big ingredient.

    The only cons I have are it may have been too sweet and no enough kick. I would definetly try this recipe again though as the basics of it are fantastic for the discerning palette.

    I was really impressed with the ingredients... however, the beer overpowered the potential of what could have been a great dish. I believe more garlic and something else was needed to kick this recipe up, 50% less beer too... I'll have to 'play' with the leftovers to bring it up to par
