Ingredients

  • 1/3 pound fresh green beans, ends trimmed, blanched in boiling salted water
  • 1 tablespoon unsalted butter
  • 1 tablespoon minced shallots
  • 1 tablespoon pine nuts
  • 1 teaspoon fresh lemon juice
  • Pinch salt
  • Pinch freshly ground black pepper

Directions

Drain green beans well and pat dry.

Heat the butter in a medium skillet over medium heat. Add the shallots and cook for 1 minute, stirring constantly to keep from burning. Add the pine nuts and cook, stirring, for an additional minute. Add the green beans and toss to coat evenly. Cook just enough to warm through, about 1 minute. Add the lemon juice, salt, and pepper and toss to combine. Remove from the heat and serve immediately.

    I soooooooooo love this recipe. I didn't use pine nuts and I blanched the beans for about 4 minutes before draining and drying them. I also seasoned to taste. I will cook this again with the raw green beans in the refrigerator.

    I was looking for another way to make green beans, other than my go to standard - almondine. This hit the mark. I did boil the green beans for 4 minutes, then reheated about 1 minute. I like them fairly crisp. The shallots,pine nuts and lemon were great.

    These beans are amazing!! Super easy. I usually make 1 pound for 4 people b/c everyone wants seconds. I do like them a little softer so I boil for a few minutes longer than suggested. Extra pine nuts are good too!
