Ingredients

  • 1/3 pound fresh green beans, ends trimmed, blanched in boiling salted water
  • 1 tablespoon unsalted butter
  • 1 tablespoon minced shallots
  • 1 tablespoon pine nuts
  • 1 teaspoon fresh lemon juice
  • Pinch salt
  • Pinch freshly ground black pepper

Directions

Drain green beans well and pat dry.

Heat the butter in a medium skillet over medium heat. Add the shallots and cook for 1 minute, stirring constantly to keep from burning. Add the pine nuts and cook, stirring, for an additional minute. Add the green beans and toss to coat evenly. Cook just enough to warm through, about 1 minute. Add the lemon juice, salt, and pepper and toss to combine. Remove from the heat and serve immediately.

    This was such and easy recipe and delicious! I will make these again. Nice change of pace for green beans. I have used... toasted sliverd almonds in place of the pine nuts, they are good with it too.Read more

    Tastes great and super easy to make! My fiance made this as a side dish for a Valentine's Day dinner and it worked out... really nicely. He blanched the green beans for 5 minutes and that was perfect. One thing that he also did that is not noted on the recipe was hit the green beans with some cold water right after blanching to keep the color green. Otherwise, the beans will turn brownish. Some people put it in an ice bath, but you can just put the green beans in a colander and rinse it thoroughly under really cold faucet water. In fact, I usually do this for all green veggies to keep the color looking fresh. Read more

    Served these green beans for a dinner party, and they didn't really stand out. I made them a little ahead of time and kept... them in a warming drawer, and for some reason they turned kind of a mottled brownish color. They tasted fine, and the lighting in the dining room was dimmed, so I don't think anyone noticed- but strange nonetheless. Read more

    The picture shows lemon zest on the beans. A must for this recipe, so simply zest the lemon prior to squeezing for the juice... and add at the end with the lemon juice, salt and pepper. Yummy and easy!Read more
