Victory is mine! These muffins were divine and light. Even with my healthy substitutions. I used smart balance instead of butter and made half the rasberry butter. I also used smart balance for the butter and about half the honey and sugar. I wanted the butter to be buttery and not too jam-like. It was. The raspberry and lemon combo is very complimentary. Lemony-sunshine came through loud and clear. Also, there was salt in my smart balance-low salt-so I did not add the added salt the recipe called for. They rose up well. Dont overmix the batter. Last healthy substitution=1/2 of the flour was whole wheat pastry flour. Thanks Emeril!

Made these yesterday. Substituted plain greek yogurt for the buttermmilk. They were super moist and I thought they had tons of flavor! My favorite though, was the butter. I froze half of it to use for another time. Ive never even heard of a raspberry butter before but it might be my new favorite thing. Oh and I used frozen berries since its what I had on hand...still fabulous! Definatly recommend making these...not a thing to complain about!

These muffins were delicious! The lemon flavor was just perfect.. it wasn't too overwhelming! The poppy seeds gave them a nice crunch and also accented the lemon and raspberry! Mine didn't rise as much as they were supposed to. My baking powder might have been a little too old, but other than that they were DELICIOUS! We will be keeping this recipe in my family to use over and over!

Somehow couldn't get the muffins to rise as much as I expected to. The flavor was light, a little too light for my taste. I doubled the poppy seeds, and I should have doubled the lemon as well. I may try these again.
The raspberry butter was nummy!

I made these muffins for breakfast. they turned out to be amazing! the only thing is that i couldnt taste the lemon in the muffins too much, but i guess it was good because the raspberry butter gave it that extra kick. everyone loved them. the recipe directions were great.

This recipie is perfect!!! When the poppy seed muffin and the raspberry butter collide in your mouth its a explosion of taste!!!! Its one of my favorite snacks, I keep it in the refrigerator!!!!!!

Even after doubling the specified amount of lemon zast and poppy seeds, these were really blah. Definitely moist, but hardly any lemon flavor at all. May try again, using three times the amount of lemon zest.

These were VERY light in texture, but also very light on flavor. I added more lemon zest than suggested, and it still had too mild a taste for me. Won't make them again.
