    I'm not a big beef fan, but for Christmas I wanted to make something special. And this recipe was most amazing. I ended up substituting fresh crab for the lobster and baby portabella for the chanterelle mushrooms in the stuffing since I can get neither...none the less, it was excellent. The only trouble I had was with the Bearnaise sauce. It started to separate before I served it. I think I got over anxious and made it a bit too early. This recipe is worth the time & money to try.

    Made it for Xmas dinner this year, it was amazing! And not too difficulty either. Recommend this for any fancy dinner or just to impress!

    I made this dinner last christmas and will be doing it again this yr. My daughter, who is Very picky (27yrs. old, took her first bite-looked up at me and stated it was the best dinner I had ever made and she had ever eaten. Her husband agreed. A little pricy, but worth it for a special day. Have the butcher butterfly it for you. He will also throw in some cooking twine if you ask.

    This was the first time my wife made anything like this and it came out
    wonderfull the directions were great.
    And is was very easy for her to make.
    Since this she has made the sauce for other vegies and its is wonderfull

    This receipe was beyond delicious, just the smell of the stuffing was indulgent. I made it for friends birthday and served it family style. I served it with whole red potatoes with butter and dill and roasted asparagus w lemon and black pepper. This dish made everyone ooh and awe. The meat was juicy and succulant and the stuffing bursts with texture and flavor. If your trying or hoping to make a lasting impression - make this dish, no one will forget it!

    The meal was a lot easier to make than suggested. The only part that I had trouble with was the bernaise sauce (it took 2 tries, but I've never been very patient. Everything came together perfectly and was so delicious. I will definately make it again.

    I made this for Christmas dinner 3 years ago (I didn't realize that tenderloin meant filet mignon and spent $90. Because we can't always afford this luxury I don't make it as often as I'd like. But, my family is still talking about that dinner and how delicious it was. I was a superstar that Christmas. I make it on special occasions now for just me and my husband. A lot cheaper feeding 2 than feeding 14. It's his favorite meal and I owe it all to Emeril!
