    I made this for New Years Dinner for my family. It was a real hit. Expensive yes, but really special. I did use the lobster, but I had to cut the tails in half in order to get them to fit in the tenderloin. Thank goodness I had help with tieing the roast - not sure you can do that with just 2 hands. I will make this special recipe again.

    Meal was great. I did not do the Bearnaise so it was not that difficult to make. I needed to use five rock lobster tails as my tenderloin was long. Also had to use dried Chantrel mushrooms and saved the filtered water as a broth. Used the pan drippings, mushroom broth and beef broth with some butter and a little flour to make a sauce.

    Ever since joining the ranks of the Personal Chef World, I have tryed several recipes- and this one tops the list. It was fantastic!-The left-overs taste just ever better. Emeril, you never fail to disappoint me-I plan to save this reciepe. I made this meal for my Mother-in-Laws Birthday Gift,she loved it!

    I served this 2 years ago for New Years Eve and friends are still sking me to cook it again. It is the best meal I have ever cooked!!!

    After eating like mad the previous 2 days, noone was too excited about trying the lobster stuffed tenderloin for Christmas dinner but since we had gathered most of the ingredients, at a pretty large expense, we had to go for it.

    Instead of baking it we varied the recipe and used the grill. This is a bit chilly in Northern Minnesota but we toughed it out and of course it was worth it.

    When the the meal was served the room went silent, then slowing everyone started moaning, louder and louder!!!!!!!! The lobster stuffed tenderloin was out of this world! We vowed to made it at least twice a year!!! Hope we all keep our jobs so we can afford it!
