    I used a 6.5lb tenderloin, doubled the minced filling, and used three lobster tails, to serve a party of ten. We barely had any leftovers. Was delicious, and definitely had the 'wow factor'. The bernaise sauce is perfect to tie together the beef and lobster. Will certainly make again(for a special occasion.

    I made this entree for a New Years Eve dinner party and it was wonderful! It was not difficult, but it was extremely expensive - I was so nervous about it coming out right. I have an excellent butcher who butterflied the meat perfectly to roll the lobster tails. I actually prepared the meat, tied it and browned it before the guests arrived, and then 45 minutes before we were to sit down to eat, I put it in the oven. I cooked the meat for 30 minutes and it was perfect - actually could have taken it out a few minutes earlier because I do like my meat on the rare side. I would make this again, but only for an extra special treat because it was so expensive - or cut down on the number of people - I served 16.

    Lots of work for me. This was a two-person job. However, it was very good and different. Guests appeared to be very impressed. I am not real comfortable that lobster tail baked inside the tenderloin was as 'tasty' as it could have been. It did make a very good impression at our dinner for six. For those trying, make sure the tenderloin is cut so when butterflied, that both the mixture and tails fit properly.

    Easy to cook - except for tying the beef - but the MOST AMAZING piece I have ever offered my guests!!! I accompanied this with the Roasted Vegetable Terrine....Both were GORGEOUS!!!!!!!! Emeril is a cooking god!!!!!

    Made this for the lovelands and yananoto's for a christmas Party Dinner. Chalis said it was the best meal he ever had. I used king crab in place if the lobster.

    I made this dish as my main entree for Christmas dinner. The recipe is very involved, but I would not say it was difficult. As long as you can follow a recipe step by step, you'll be fine. The outcome was delicious and was the big hit for my family's Christmas dinner.
