    I made this recipe to a T, and I was disappointed. the cheeses were very expensive, and gave it a sort of italian feel that I didn't like. I used elbow macaroni and was hoping for a creamy macaroni and cheese. I will try another recipe with different cheeses.

    i made this recipe and it is not at all what most consider to be mac & cheese.

    My future Daughter-in-law loves this dish, as mac and cheese is one of her fav dishes to start with but this one she loves!!!

    My family loved this recipe. I would have given the recipe 5 Stars but did have to add about 1 cup more Half and Half in order to keep it from being too dry. (Thank you previous reviewers for the tip!

    I bought all fresh cheese and grated it myself. I would suggest using all the cheeses as per the recipe because the flavor was just superb! This definitely took some prep time. However, the result was so yummy that it was well worth it.

    This is definitely Mac N Cheese kicked up a notch!

    This was decadent! Lots of flavor. I didn't use the pancetta because I can't find good quality locally. I used whole wheat all-purpose flour & whole wheat macaroni. I didn't have enough half & half, so I used what I had, plus whole milk, and even some soy milk. Also used sprouted wheat bread crumbs. Oh my, this was tasty! I made a double batch, which gave me a large baking pan, and two medium casseroles that I froze for later munching. I have to wait until we work off the calories from this batch! ;

    No surprise that this is a really good recipe. It is not a creamy macaroni and cheese dish though. None the less it is gooooooooooooood! If you want creamy just prepare a cheese sauce (melted cheese and milk and pour it on top of the macaroni and cheese and bake it!

    This was the tastiest mac & cheese I have made. The bread crumbs on top were what really made it great also. The only complaint is the amount of liquid. I added more milk after it was cooked and it worked out fine.

    Emeril takes mac-n-cheese to gourmet level. Truly an out-of-this-world concoction. And as he suggested in the episode, this makes a terrific meal when you add lobster to the mix & serve with a nice salad.

    Emeril, you have changed the way I make mac and cheese. This recipe was fantastic and was easy to make. Before my mac and cheese was well ,,,awful,,,but now because of you I have a fantastic recipe and it tastes great. My family loved it.
