You can create up to five timers

Ingredients

  • 1 tablespoon butter
  • 1/2 cup chopped onions
  • Pinch of salt
  • 2 cups small diced mango
  • 1/2 cup white vinegar
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

In a saucepan over medium heat, melt the butter. Add the onions. Season with salt. Saute for two minutes. Add the mango. Continue to saute for 2 minutes. Add the vinegar and the sugar. Bring the mixture to a boil. Whisk the cornstarch with the water. Whisk until smooth. Stir the slurry into the mango mixture. Bring the mixture back to a boil. Continue to cook for 4 minutes, stirring constantly. Remove from the heat and cool completely. Store in an airtight container until ready to use.

    Super simple to make. Was a bit tart, but yummy. I might make it with red onion next time to add more color.

    I made this last night to go with jerk chicken and red beans and rice. It was so simple and sooooo good! YUM!!!

    I was amazed at the simplicity of this recipe. It saved the premature mango in my refrigerator and did wonders for the pork chops for this was the side.

    This chutney is especially flavorful warm. You will want to reheat this to get the most of the flavor addition to your meat.
