    I followed the recipe as written, as I always do, and every time I make it, it's a big hit. Makes plenty for a crowd and to share later. Love it. Great flavor. Really special.

    I used chicken thighs instead of duck and Louisiana hot links instead of smoked sausage. This spiced it up quite a bit.

    I think it's a typo about 8 cups of water(2 quarts, and 2 cups of rice. That's way too much liquid,
    I made this and the flavor was great but the rice was slimey. I'd cut the liquid to 6 cups.

    Bland, tasteless, and the rice turned to mush. I followed the recipe to the letter. It didn't even have enough potential for me to mess around with the recipe and try it again.

    This makes a "boatload" of jambalaya but that is no problem. The leftovers never make it past day 2. Awesome!!

    I have made this jambalaya several times times. I even made 3 gallons of it for a dinner at work. Everyone loved it. People were asking for the recipe and were raving about it. One fellow even took home 3 bowls to eat later. Of course I told them this is Emeril's recipe and gave them the recipe from the web site. The only changes I made is that I used smoked chicken instead of duck and I also used smoked sausage. It turns out great.

    I made this for the family on Fat Tuesday, but I used boneless chicken thighs and chicken tenders, instead of duck . Everyone loved it !
