The first time I made this dish I broug it to a church pot luck - it was the hit of the Easter breakfast! It will replace my prior standby breakfast casserole.

The corn tortillas were a little too flavorful for my tastes, but I think that was my fault. I bought a thicker tortilla than what you usually get at the store. Otherwise this is an excellent change of pace from "Grandma's" breakfast casserole!

I made this casserole for a staff breakfast and was overwhelmed by compliments on this spicy and delicious casserole. A welcome change from the ordinary egg dishes!

I took this for a holiday breakfast buffet. Everyone requested the recipe! It was spicy but delicious. Took me a while to make though.

This was fabulous! I made no changes. If you don't like spicy cut back on the chili powder and maybe a regular monterey jack. Don't skip the poblano peppers.

This was so amazing that it was all my family wanted to eat all day. Breakfast, lunch and dinner. For the non spicy eaters, have them peel off and not eat the peppers on bottom. Super Yummy!!
