    I hate meatloaf, my mom would cover it in ketchup just so i would even taste it. i have made this twice now and would not change a thing. There is always left overs, which is a plus in my family. I always double the glaze recipe and let the kids add to it when it hits their plates. I have found it goes quite nice with honey glazed carrots, or blacken green beans. Thank you Emeril for making such a down home dish so amazingly tasty!!!!

    I have made this recipe several times, but I had to change meats and use only ground round 90 percent its perfect..love this matloaf

    I have never been one for meatloaf because I just never found the right recipe. My husband said this was the best meatloaf he has ever tasted. The only change I made was eliminate the veal, as my husband is allergic, and increased the pork (sausage to one pound. I must of used every bowl in the kitchen and the time it took to prepare took much longer than stated, but it was well worth the time invested and the dishes washed. The leftovers made the best sandwiches. I can always count on Emeril for the best recipes.

    No Joke...this is the BEST meatloaf ever! Our well behaved dog snagged a bite after we ate (and she never does that! and Emeril's meatloaf was so good we just carved off the part the dog ate and finished it the next day! Gross, huh? Nutahh...you let your dog kiss you, right? So she just kissed our meatloaf!

    Seriously, I am making it again tonight (a week later...couldn't find ground veal and substituted ground turkey. BAM!

    My husband & I made this recipe exactly as it was written. The
    taste was so wonderful and it was well worth the time it took to prepare.
    The glaze was out of this world so please don't cut corners and leave this part
    out. It is an important part of all the wonderful taste this recipe provides.

    We would highly recommend this recipe to anyone.

    We have made this recipe with two additions. IN the meatloaf...we added 3 slices of Ciabatta bread that was soaked in milk then squeezed. On TOP of the meatloaf...we added Panko bread crumbs. We have made 18 of the meatloaves , let them cool over night in the fridge. We made meatloaf sandwiches and an entire fundraising group went crazy! The recipe was printed and all copies were taken with enthusiasm. This is a keeper.

    I love to experiement with meat loaf because it is one of my husband's favorite dishes! This meatloaf was absolutely delicious! I have 3 grandchildren (6,2 & 1 and all three (yes, including the 1 yr old could not stop stuffing themselves with this entree!! My husband raved about it - so yes we will be making this again! I did alter the recipe just a bit - my grocery store does carry veal - but it is hit and miss. At the time I bought the ingredients, veal was a miss so I substituted a half pound of ground turkey instead. Fantastic!!

    I followed this recipe exactly with the exception of using a red bell pepper, which turned out great and adds nice color. I had slightly under 2 1/2 lbs. of meat (beef,pork and veal and was worried the loaf wouldn't hold together, but it did. There was alot of grease though, so I threw a cookie sheet under the loaf pan half way through the baking since grease was dripping over the side of the loaf pan and creating quite a mess in my oven. I carefull drained as much of the hot grease as I could and let the meatloaf rest in the pan for about 10 minutes before carefully moving it to a platter. I then allowed it to rest another 10 minutes before slicing it. My guests raved about the flavor and there are hardly enough leftovers for lunch! My husband thought the glaze was very important and thought it added alot to the meatloaf.

    This was truly an amazing meal. It was so flavorful and juicy. I was hesitant about some of the ingredients but used everything listed. It was so good. My family loved it and there were no left overs!! Emeril you are a genius!!!
