    The guys at the fire station love this recipe! I double it so we have leftovers for lunch on the next shift. I sautee all of the veggies ahead of time so they somewhat dissapear in the meatloaf when it is done because one of our guys says he is a "supertaster" whatever that is! We just think he may be a little light in his loafers! Just kidding, he is a very maucho guy who should be the poster boy for a meat and potatoes diet.

    p.s. I make Emeril's chicken enchilada recipe too, which is also awesome.

    I made this recipe and it came out great! It was so moist and flavorful! My husband and 2 daughters are not fans of meatloaf but they all loved it! I will definitely make this again and again. I can't wait to make it for my mom! I did make a few changes and it was still wonderful. I used the amount of ground beef called for but I used 1 lb. of the ground pork and used no veal. I also added about a 1/3 to 1/2 cup fresh grated parmesan cheese and substituted tomato sauce for the ketchup (I'm just not a fan of ketchup. Also for the glaze I omitted the brown sugar. After the meatloaf was done I sprinkled some shredded Italian mix cheese and put it back in the oven for a few minutes until it melted. Thanks Emeril for a great meatloaf recipe!!

    My whole family loved this recipe. It was worth the extra time to prepare compared with basic meatloaf recipies. The only substitution I did was to use 2 1/2 pounds of meatloaf mix from my butcher. There was only one slice left over and it tasted awesome the next day!!

    this was a good traditional meatloaf with a very nice glaze on top. Few meatloaf recipes that I have found remember to concentrate on a good glaze.

    This was delicious and tasty! And to refute a prior reviewer, I don't work for food network. I have tested many of the recipes on this site- and I wish I could enter the "Next Food Network Star" contest, but I'm kinda older and not so hot as I used to be!! My husband, who is a 'meat and taters' guy loved this...so I guess ordinary folks who are looking for a twist to meatloaf might like this!

    I made this recipe to the letter and it was great. My Son, his wife, my two grandchildren, my sister and her family raved about this meatloaf. The veal was expensive and hard to get, but I managed and boy an I glad I did. I'll do this again. Thanks Emeril.
