    My Brother and like to get together once or twice a year and try out a new recipe. We are both Emeril fans and love meatloaf. After reading the reviews we were sure we had a winner.

    We followed his recipe to a "T." We even drove to the next town to a specialty butcher shop to get our meats. I have a vegetable garden at home so the fresh thyme was n problem.

    We ended up severely disappointed. We both have recipes for "everyday" meatloak that are CHEAPER, QUICKER, EASIER, and MUCH TASTIER.

    I really wish I could have written a favorable review b/c we are fans of his show. I'm also doubting the other reviewers. The best I can say is they must be either very new cooks or Food Network Employees for this recipe to have gotten the reviews it did.

    I actually altered the recipe a little. i used 2 lbs beef and 1 lbs pork instead of the 1/2 lbs pork 1/2 lbs veal. I also added 4 small chopped tomatoes. This was so great and moist with a very delicious topping that just makes this stand out from others.

    I'm embarrassed to admit that I've never made a truly good meatloaf. (Think dehydrated onion soup mix. Mighty Meaty Meatloaf was my first "from scratch" meatloaf, and it was so worth the extra few steps. I served it to dinner guests, who RAVED that it was so moist and flavorful that it didn't need any gravy. Used the leftovers to make incredible stuffed bell peppers. Thanks, Emeril! (BTW, dined at Emeril's Restaurant on a recent trip to New Orleans -- BEST dining experience my husband and I have ever had, in every way!

    This recipe is very easy and extremly flavorful! I have had meatloaf before and I never liked it, they are always too dry. This one is sooo juicy! Make sure you place a piece of foil under the loaf pan, it can get messy in the oven.

    My family really enjoyed this recipe. I substituted fat free evaporated milk for the cream and was still fabulous.
