    I made this recipe just because I wanted to do something special for my husband. It was a great choice. It is rated difficult, but it was not hard to do at all. You just need to read the recipe and take your time. The profiteroles were excellent. The leftovers I am putting chocolate in. I did not have crawfish so I chopped up shrimp. It would be excellent on crackers or in a baked potato. And that butter sauce that went on top would be good on anything! Just a great all around recipe. One of the best ones I've used from Foodnetwork. If you change the recipe to suit your taste and didn't care for the results, or rate it because it doesn't "sound" great, or rate it because there was no nutritional information....Really? The people who want to read about the recipe and what others thought about it don't care!

    I actually only made the citrus sauce from this recipe, but I served it with Talapia over steamed snap beans; poured sauce over both. Fantastic!
