These were great! I did not have to cook longer than 2 hours. I soaked my beans overnight and cooked on stove top for 1 hour as the recipe specified and baked in the oven with the lid on for 2 hours. The lid helps to steam the beans. I also trimed off the fat end from the salt pork and spooned about half the fat drippings before adding everything to the pan. It seemed like way too much fat. I did add a little water towards the end because it looked like they needed more liquid. Great recipe!

I tried this recipe after seeing a rerun of the show last week. I do not measure too much for things like this, but I used much less ketchup and brown sugar and no salt pork (only bacon because I didn't have any and didn't want to go to the store! They cooked longer than 2 hours in the oven and I added the rest of the bean liquid because they were getting very dry. But they turned out delicious and very tender. I did soak them actually a bit more than overnight because I didn't have time til later for the rest. Try them!

these beans are really good, but a bit spicy. I just cut down on the caynene pepper a bit and they are wonderful.

This is one of two Emeril recipes I made today & did not care for either! I usually enjoy all of his. All the effort & expense of this one! I even soaked & cooked them longer per other's feedback. That old memory of family picnics with baked beans-----just not there. Back to the drawing boards!

These are SOOOO worth the effort! I didn't add as much of the cayanne pepper though, and it was just enough heat. I did add a little bit more sugar only because I like my beans on the sweeter side, but the recipe itself is just fine the way it is for those who haven't tried this yet.

Didn't like chewing on the salt pork and a bit too spicy-hot. I make about 15 different recipes of baked beans and this recipe sits about in the bottom 1/3 of the list.
I think both Alton's and Giada's recipe are tastier and simpler to make.
