The roasted beets were so sweet against the tang of the vinegar and orange juice. I'm definitely going to make this again for my next dinner party!

I used half as much olive oil along with tarragon vinegar. Served with poached salmon....my guests were thrilled, and two called for the recipe! Yum!

Son in law loved this salad and he is a salad eater that is hard to please.
