Mixed Vegetable Slaw

Ingredients
  • 1/2 pound julienne zucchini
  • 1/2 pound julienne yellow squash
  • 1/2 pound (about 4 carrots) julienne carrots
  • 1 julienne red onion
  • 10 cherry tomatoes, quartered
  • 1/2 cup olive oil
  • 2 tablespoons white wine vinegar
  • 2 tablespoons chiffonnade fresh basil
  • Salt and black pepper
Directions

Combine and mix well. Refrigerate for 30 minutes.
