Ingredients

  • Cracked ice
  • 1/4 cup lime juice
  • 2 ounces white rum
  • 2 teaspoons sugar, or to taste
  • 2 sprigs fresh mint
  • 4 ounces club soda

Directions

In a cocktail shaker, combine all ingredients in a cocktail shaker and mix well. Strain and serve.

    Very easy recipe, however, not much taste-think it would have been much better with a simple syrup....thought Emeril would have come up with something better

    Nicely balanced. Well, gotta admit I modified it a bit. Used 1oz simple syprup in place of sugar. Crushed mint leaves with rum the 1st round & with the 4 simple syrup 2nd round. 2nd time wins! But, isn't it always better the 2nd time around? Ya gotta try it! Adjust to suit your own taste.
