Ingredients
- 1 tablespoon olive oil
- 1/2 large onion, diced
- 8 hot dogs, cut crosswise into 1-inch rounds
- 6 cups chicken stock
- 2 cups fresh or thawed frozen peas
- 2 medium potatoes, peeled and diced
- Salt
- 2 tablespoons chopped fresh mint leaves
Directions
In a saucepan over medium-high heat, add the olive oil and heat. Add the onion and saute until softened, about 5 minutes. Add the hot dogs and cook another 2 minutes, or until the hot dogs start to brown. Add the stock, peas, and potatoes and bring to a simmer. Simmer until the potatoes are tender, about 15 minutes. Season, to taste, with salt. Just before serving, sprinkle with fresh mint.

This was a really good soup, although I found it to be a little salty when prepared using commercial broth. Nice comfort food, and I also thought it would be good to add frozen peas-n-carrots mix instead of just peas.

A good light soup and easy to made it vegetarian version. The touch of mint leaves before serving is great.
