everyone loved it. Hubby wanted ketup on it, and we thought there was to much onion. I could not find veal stock so I used one cup chicken and one cup beef stock and it turned out good.

My husband hated meatloaf until I made this one: even the kids like it.

Tonight was the second time I've made this recipe. I think the concept is great and I liked it the first time, but I thought "something" was missing. On a whim this time, I used 1 lb of ground beef and 8 oz crumbled Mexican chorizo because I had the chorizo on hand. I kept the rest of the recipe the same except I used homemade beef broth and added 1 TBS of Essence to the meatloaf. The chorizo really added to the meatloaf and gave the gravy an incredible dept of flavor. I highly recommend this method to anyone who wants their meatloaf to be really special!

Maybe if I had used veal Stock (who can find this? the flavor would have been better. My husband and I thought it was just average and needed something. I'll stick to Paula Dean's meatloaf.

This meat loaf recipe is awesome! I used all ground beef and beef stock instead. I used my own mushroom gravy so I can't comment on the gravy that came with the recipe. My very picky 3-year old son even liked it! My husband who is not very particular about meat loafs really loved this! I also added some mashed potatoes and buttered corn as a side dish. Will definitely make this again and again!!! Thanks Emeril!

Mom never made meatloaf this good! Juicy all the way through. It had to be the broth. My boyfriend doesn't eat pork so I replaced the ground pork with ground veal. I also gave up on looking for the veal broth and used beef broth instead. No more dry ketchup meatloaf. I would give Emeril 5 more stars if I could!

Instead of using veal stock just use beef, turkey or chicken stock instead. Hands down the best meatloaf I have ever had. Some of Emeril's recipes are hit and miss, BUT this one is great!
