Fabulous, but I took even more over the top by substituting the ground pork with diced pancetta which I then rendered and browned. Then used the fat to sautee onions, etc. I used diced red and yellow peppers instead of green and upped the red pepper flakes to 1 tbsp. Yummy! (Bacon should be a fabulous substitute for pork as well.

I was trying to find a way to use up some of the leftover roasted chicken from Costco. This recipe just filled the bill! Chopped up the chicken instead of ground meat. Followed the recipe generally speaking. Added a little Sazon spanish seasoning to give it a Latin flavor. Was amazed how tasty it came out. Will do it again. I did not parboil the bellpeppers to cut down on preparation time which made them a little tough. Maybe next time will try those Mexican peppers which are thinner. But excellent recipe. You can play with it and make variations.

This was my first attempt at stuffed peppers. I am not a big fan of green bell peppers so I used mostly red, orange & yellow ones. I did use one green pepper and did include the green pepper called for in the recipe. I used sweet italian sausage in place of the ground pork. I tasted the filling before stuffing the peppers and felt it needed a bit more "heat". I stirred in a few sprinkles of cayenne pepper. Maybe next time I might use hot italian sausage.

This is the first time i used ground pork along with the beef for stuffed peppers. It was very good. I would make it again, and of course the husband liked too.

DELICIOUS!! I added garlic powder, extra pepper and red pepper flakes for more taste, and used 3 large bell peppers cut in half and "over" stuffed them a bit. *They reheat wonderfully for lunch the next day!!
My only quam, is that the prep time is WAY OFF. From the time I began chopping (which I consider "prep time" to the time we sat down to eat, was close to 2 hours. I will say though, it was worth it, and I would make them again!

really really good...followed the recipe mostly - I did add more red pepper flakes and garlic sausage- you can really give this recioe your own touch - topped with italian blend cheese and baked in a zesty tomato sauce

I was skeptical of this recipe because it looked so plain-tasting. I was wrong! These are outstanding! I made two slight changes in that I added a tsp of thyme and used more pepper flakes than called for. I also added tomato sauce with the water in the bottom of the baking dish because I had only had a 16 oz can of sauce instead of 8 oz, so why toss the sauce?
These were delish! Next time I'll try substituting quinoa for the rice and turkey sausage for the regular sausage to see if it tastes the same w/o the calories/fat, but the whole family LOVED these stuffed peppers.
