My husband, who tells me not to put bell peppers in anything, loves stuffed bell peppers! Go figure...Anyway, I hadn't made any in years and found Emeril's recipe. Wow- what a hit. Now these are requested in my house!

I do not like stuffed peppers but my husband LOVES them so when I make them they are a statement of love and long time married. These peppers were so easy to make and he loved them....... He will diffently be having stuffed pepper more often now. i just used a little less rice and only ground beef and poured extra tomatoe sauce on top to keep moist as they baked.

I made these peppers last night and they were the most flavorful stuffed peppers ever. Very easy. I also used 1/2 the tomato sauce in the pan instead of water. I had extra rice left over and I added that to the tomato sauce in the pan. A very delicious entree and it's well worth the work.

This was so simple to prepare. I also used only ground beef, tomato sauce in the bottom of the pan, added cajun seasoning and some parmesean reggiano. My husband loved them!

This recipe was awesome and so easy to make! I varied the recipe a pinch by dicing a combo of red and green peppers and adding shredded cheese in the meat mixture. I following a tip by other raters and used tomatoe sauce on the bottom of the pan instead of water. Topped the peppers w/slices of cheese - provolone mainly and one w/pepperjack. Fabulous!! Will be making this on a regular basis!!

Followed recipe with the following additions...diced red bell peppers for the saute mix (instead of the green caps...used brown rice...added one 10 ounce can Rotel diced tomatoes/green chiles...cooked for two hours in slow cooker with water and can of tomato soup on bottom, added shredded casserole cheese to tops ten minutes before serving. Delicious and easy.

I have made this a couple of times now and it is always delicious. I use ground turkey to reduce the calories and fat and add chicken broth instead of water to cook the rice. I also add tomato sauce at the bottom of the pan after it comes out of the oven. (I pour off the water. this is a keeper.

I made the filling the day before and didn't know if there would be any left for the peppers...my family Loved it. I always add a little more of the spices than it calls for to boost up the flavor when cooking. I also add tomato sauce to a can of tomato soup, pored this in the baking dish and over the peppers...it's what my mother-in -law does and it was great.
