I was able to take care of my two little ones and make this meal in a very reasonable amount of time! I am a beginner when it comes to making homemade food. My family loved the recipe and will be entering this one in to my family cook book! I hope you enjoy it as much as we did!

I used ground turkey (1.5 lbs in place of the beef and pork. I added 15oz can of diced tomatoes to the filling in addition to the tomato sauce. Before adding 1 cup of rice, I filled 3 of the peppers with the filling. I then added 1 cup rice and filled the remaining 3 peppers. The family all agreed that they preferred the peppers without the rice. It was just extra filler and diluted the flavor of the stuffing. Very hearty and delicious. I served with a salad and steamed kale. The kids loved the dish.

This is the best stuffed pepper recipe that i have ever tried and very easy to make. My husband likes saucy food so i substituted the water in the bottom for tomato sauce and put two spoonfulls over the top of each. For presentatin i sprinkled a little bit of grated cheese on the top and melted. The pepper filling makes a great dish in itself.

Made this recipe for my family and everyone loved it, including the picky eaters! Each pepper is VERY filling. I used instant whole grain brown rice instead of white rice. Anxious to substitute salsa for the tomato sauce to see how that comes out.

Emeril you did it again. I can't wait to make this for my mom and dad. Dad is such a picky eater but I know he will love this. To add a little extra BAMM to the recipe we added sour cream before serving YUMMMMMMMMMIE!
