Quick and easy, but tasted like you cooked all day. Instead of tomato sauce, I used jar spaghetti sause. The family loved it. It's a keeper.

Plenty of food for 3. Great for when you need a warm meal. Quick and easy on a cold winters day.

THIS MEAL PUTS VEGIES ON THE PLATE!! JUST THE RIGHT AMOUNT OF SPICE AND VERY FILLING. I USED RED AND YELLOW PEPPERS INSTEAD OF GREEN PEPPERS SO IT WAS VERY BRIGHT AS WELL.

I was looking for a good stuffed green pepper recipe and came upon this. The recipe itself was easy and I was glad to cook the filling ahead of time. When I tried the filling, even with the red pepper flakes, it was bland. This tends to be common in stuffed green pepper recipes. So I added a little Essence and some cayenne. That fixed it! It kicked it up a notch and made all the difference in the world. If the green peppers are large, which mine were, it will only make enough for four. Parboiling the peppers first ensures that they will be tender when eating. Thanks, again!

I originally made stuffed bell peppers as a new bride many years ago using canned Spanish Rice. When I could no longer find that, I tried boxed Spanish Rice and did not like it at all. So, I searched for a recipe that was similar to mine and found this one. It is better than the original and doesn't take much longer. We eat it with a salad and bread and that makes a well-balanced nutritious meal.
