I've made this recipe a few times now with slight variations each time. Last couple of times, I've used ground turkey in place of the beef/pork, and yellow or orange peppers to achieve a lighter flavor (which my kids prefer. This last time I 'took it up a notch' by adding ~5 small sliced serrano peppers along with the onions and chopped bell peppers. My son and I love the spicy stuffing and my daughter likes the flavor the sarrano's add while eating around the actual serrano slices.

I really enjoyed this recipe, but I would have liked it to have more tomato sauce. I doubled the amount as a result.

This recipe called for a half pound of ground pork and a half pound of beef. I wasn't able to find the pork at my grocer, so I made this with a pound of ground beef. The turn-out was still delicious and full of flavor, like I would expect anything less from Emeril.
Prep time was quick and overall very easy to make.
Can't wait to make again, but this time with the pork.

this recipe was super east to follow and the flavors were excellant.
Everyone at the gathering enjoyed them and wanted the recipe.
They were gone in less than 30 minutes....
