    This recipe made enough for at least another 5 peppers! I added about 8 large mushrooms sliced thin to add to the mixture/meat. Used a large clove of garlic. No fresh parsley so used flakes; a good tablespoon. Had a can of diced tomatoes that I pureed to add to the rice before I added to the final mixture. Cooked uncovered for 25 min. Turned off the oven then put Mazzerralla cheese on top of each pepper.
    The extra filling will be used as a side dish for anything. It's soooooo good!

    this was my first time making stuffed peppers. what an easy, delicious recipe! i added tomato sauce to the bottom of the baking dish and mozz on top of the peppers for the last 5 minutes

    Great recipe! I made them more Tex-Mex by using Emeril's Southwest Essence on the cooking meat and by using 8 oz salsa instead of tomato sauce. Topped the peppers with shredded cheese and they were delicious.

    Wow! This recipe is tasty!! I did add a can of fire roasted tomatoes and topped with cheddar like some reviews have suggested. Also, instead of adding red pepper flakes I used spicy sausage. And instead of rice I used quinoa. Normally my husband hates quinoa but he loved these stuffed peppers. He mentioned more than once that I can definitely make them again. Thanks Emeril and to everyone that posted!!

    Fantastic! This recipe really lends itself to letting put your own twist on it. You can follow it exactly or swap out ingredients that you already have. I've used ground turkey and it's still delicious. If you have extra stuffing, as I often do, you can mix it up with beans and make burritos or nacho toppings!

    Delicious! I used ground turkey instead of the pork to cut out some of the fat but they still tasted great. The recipe is so easy to follow and had no difficulties!

    I add is a little more crushed pepper to make it spicier. I'll mix up the peppers with red, yellow, orange and green depending on what looks good at the store. Finally, I've used ground turkey, pork, beef, and it always tastes good.

    This recipe was amazing! I used a box mix of Spanish rice with Rotel tomatoes in it. I also added a little shredded sharp cheddar to the top of the peppers the last few minutes of cooking. Will definetly be making this recipe again!

    I'd been searching for the perfect stuffed bell pepper recipe, and this is it..I finally go around to making them, and the taste was absolutely wonderful, although I added two Tablespoons of Emeril's Essence, and a can of diced tomatoes instead of the 8oz can of tomato sauce..it was off the chain !!!!!!Thx
