Great recipe! I made a few changes:
1lb of of spicy ground sausage instead of beef or pork. I chopped up a cup of red pepper instead of green pepper and I added 2tsp of red chili powder, spicy and delicious!!! I also used brown rice to make it healthier!

Very good recipe. It reminds me of my mom's. Here is how to make it better, besides using red, or yellow peppers. Use Vegeta instead of salt. You will still need to adjust the salt in the end. More importantly, serve with tomato-bechamel sauce (Bechamel sauce with an 8oz tomato sauce mixed in.

Great Recipe! I make a couple of changes. I used 1lb of Italian sausage and after browned I added a few of tablespoons of white wine and reduced it down. I also added a can of Italian seasoned diced tomatoes with the tomato sauce. My three year old loved it! We will definitely make this one again.

These are great! My only changes were:
Red bell peppers instead of green bell peppers. Added some freshly grated parmesan to the mix just before I stuffed it in the peppers then sprinkled some on top of them when they came out of the oven. I didn't use chopped green bell peppers in the stuffing b/c I didn't have any. Instead I used a little extra onion. I realized at the last minute that I didn't have tomato sauce so I subbed in some relatively bland Ragu that was in the back of the fridge. I only had ground beef so I used 1lb of that instead of half-pork-half-beef.

I have made this several time and it never failed me. Try using Brown rice. It is even better if that is possible.

I can't believe how much flavor these had! The only modifications I made to it were adding about 1/4 cup of parmesean and about 1/2 cup of shredded mozerella and asiago cheeses to them and they becamse slightly gooey. Then toward the end of the cooking time, just a pinch of these cheeses on the tops finished them off. The one thing I've never done when making stuffed bell peppers is par boiling before hand and the peppers melted in my mouth.
This was such a yummy recipe and I am not a bell pepper fan at all.

Thanks for recipe: Cook for my 90 year old Mother so made unstuffed, added red, yellow and orange bell peppers chopped, used ground turkey and brown rice.

These were so good. I used veal, pork and beef chop meat. I used Quinoa instead of rice it was really good. I also used all different colored bell peppers except green. It was really easy to make also. I added a little bread crumbs and four grated cheeses parmeasan, asiago, fontina and provolone. My family really liked them.

Thanks Emeril for another tasty and easy to make dish. I've wanted to try Stuffed Green Peppers for some time now since I love italian style food. I took a couple of suggestions from the reviewers and the peppers turned out great. I was really impressed because I thought it was going to be harder to make. Another winning recipe from Mr. Lagasse.
