This recipe is a wonderful basis for experiment. I omitted the artichoke hearts, replaced them with smoked oysters. Instead of using button mushrooms, I used white oyster mushrooms for a little bit of an earthier taste. I stuffed four trout that were caught the same day by my husband and our guests were in heaven!

I loved this recipe. The fish was cooked perfectly and the stuffing was out of this world. Thanks again Emeril!

It wasn't bad, but wasn't as good as I thought. However, my husband liked it.
Maybe I will make it again.

My first experience with trout but it certainly wont be the last! I modified the recipe using white whine instead of cream and it gave the stuffing and fish great flavor.

This recipe looks like a lot of steps, but it is actually quite simple and delicious. Also it looks gourmet.
