As an African woman I grew up eating soulfood and greens is definitely one of my favorite things to eat. My family didn't cook theirs this way, however I found these to be pretty good with the addition of some garlic, onion, red pepper flakes and a little vinegar for the bite that I am use to getting when I eat collard greens. I bought a couple of prewashed bags of mixed greens from Trader Joe's which made this a very easy dish to make. I can't say that I won't ever make them with hammocks anymore, but this is still a nice new extra way to know how to make my favorite vegetable. Thankx Emeril you rock baby boy.

Another case of "I've never cooked greens before" and I loved them! It's a completely different method than others I've seen used, and I'm glad I tried this one first. This method makes them taste great!! The only things I did differently was use leftover bacon grease instead of frying fresh, subbed veggie stock b/c that's all I had, and threw in a pinch of crushed red pepper.

I made this tonight for my husband and we both loved it! I used just collard greens and I crumbled up leftover bacon I had cooked at breakfast, and used a little bacon grease that I had wisely saved as well. ;o I only added a splash of vinegar in it to give it a bit of twang! I'll be making this again!

After trying and failing many, many times to cook greens that tasted as good as my grandmothers, this recipe wins hands down. Thanks, Emeril!

I didn't find the mustard green, however, it was great with the rest. Loved it alot. Like one member wrote, I gave it a kick w/ pepper flakes. BTW..do watch your show for more cooking ideas. Happy Holidays Emeril.

I used this to cook only mustard greens. Added less broth and put in vinegar, also added some chopped onions. Very good!

I used the pre-packaged collard greens from Wal-Mart; that saved the tedious cleaning part. I only used 4 slices of bacon and it tasted great. I also added a few dashes of Tabasco, a hefty tblsp. of cider vinegar, and several shakes of Cavender's Greek Seasoning. I love greens and this was Fantastic!
