    The crust left something to be desired. Mine came out almost burned. The oven was too high and the crust dry. The actual cake was smooth and creamy. I will make it again but reduce the oven during the crust preparation.

    I'm sure it has everything to do with my shoddy baking skills but I had a terrible time with this recipe. It sounds delicious but my version was lacking. In my oven the cake went from very jiggly to way over done in about 4 minutes and the crust was burned after the final baking as well. The flavor was good even though it was overcooked. Also I could not get the caramel to turn amber, perhaps I don't have a "heavy" pan. I will try again for sure, maybe after I can master an easy cheesecake recipe.

    This is the third time that I have made this cheesecake. My mom says that I make the best cheesecake. I think the secret is in the lemon and orange peel because it makes it seem like a lighter dessert. Thanks, Emeril!

    idk if i did something wrong but the cheesecake came out overdone around the edges and cracked a lot. i couldn't get the caramel to brown to save my life!!! i tried three times, then i resorted to brown sugar and it was super watery, i couldn't get it to cook down no matter what i did. if anyone has tips they would be much appreciated. if not i will just use premade caramel next time because people did like the cheesecake even though i thought it overdone.

    Used organic cream cheese. The filling was grainy. And perhaps the temp in the recipe was too hot.
