    This recipe is the best cheesecake recipe ever. Wow so rich and smooth.... wonderful in every way.. Lip smacking wonderful.... and those toppings...who would of thought!!!!!!\

    I followed these directions all expect I used cherries for my topping. Was a bit worried with all the chatter about the 500 degree oven temp.... WELL... IT CAME OUT PERFECT! Don't deviate... the temp settings and times are correct in the receipe.

    The ingredients for this cheesecake are great. I have to wonder if the temperatures are typos though.
    It says to start the cake off at 500 degrees for 12 minutes. Thankfully I checked it after about 8 minutes. The edges were starting to burn. The crust was not edible.
    Then the recipe says to bake at 200 degrees for an additional hour. After 90 minutes it was still not done. I turned it up to 275 for another 30 minutes.
    The filling was WONDERFUL. It was one of the best I've had. I love Emeril and his recipes are usually fool-proof. Something is seriously wrong with the temps on this one though.

    I have made this cheescake many many times. My father in law, who by the way, does not like cheescake, will only eat this one when I make it.
    Have even made a few and sold them.

    It says the level is up there, but it really isn't difficult at all, just stick to the directions and it is all good. It is time consuming, but most great things are. Well worth the wait. I used the zest then quartered out the citrus and shoved it in the Turkey with the herbs andeverything gets used!!!

    I made this in mini-muffin tins for personal serving sizes. It turned out creamy and delicious. Just make sure you set your oven 100 degrees lower than the recipe indicates.
