    My husband and I absolutely love cheesecake. I love trying new recipes so I came across this cheesecake recipe by Emeril and then I decided to bake this cheesecake for my husband as today is our one year anniversary and it was the best decision ever. We've been to famous cheesecake spots all of the world but this cheesecake recipe by Emeril is superb. The consistency was perfect and so was the taste. I did make a few changes though, I took some of the recommendations from the reviews and doubled the graham crackers and baked the cheesecake at 400 degrees for 12 minutes and then reduced the temperature to 20 degrees and baked for another hour and a half. I decided not to do a topping but swirl a strawberry puree that I winged based on the topping recipe. I also had extra batter left over so instead of wasting it I just made some additional graham cracker mixture and made cupcake size cheesecakes. Absolutely delicious!

    I needed to make a dessert to take to my aunts since I havent really seen her in almost 9 years. I knew she love cheesecake. I saw the reviews, and decided to make this one. I did every step and added everything but the orange zest, let me tell you, it was the best cheesecake ever. Except for the two large cracks that accorded in the middle of the cake, I just cut some fresh strawberries and placed them over the crack. Everybody loved it, and want me to make it again. Thank you Emril......

    I could tell just from the ingredients...this recipe called for the most cream cheese and eggs I've ever seen. LOVED IT, LOVED IT, LOVED IT!!! I made my own topping by just blending a jar of strawberry preserves and a few tablespoons of orange juice. I'm making it for the second time tonight. My husband just can't get enough. AWESOME!

    This is a keeper! Please see other reviews about cooking times/temps: very helpful. I didn't use lemon zest, but doubled up on the orange zest and even squeezed a small amount of the juice into the cheese mixture. After baking, topped the cheesecake with a dark chocolate ganache. Heaven on earth--smiles all around! Oh, it didn't even crack-bonus! :- Can't wait to make this again and try it with the blueberry sauce.

    Excellent cheesecake recipe!! Cheesecake ended up being really creamy but not heavy, with the orange/lemon zest adding a refreshing citrus note. I must say that my cake did crack into a huge seismic fissure down the middle, which I wish the recipe had addressed. But the crack didn't affect the taste. I made this for the family christmas dinner, and everyone RAVED about it.

    Also, I got lazy and used canned blueberry toppings, instead of making the topping in the recipe. Blueberries are a rarity here. Still great!!!

    My cheesecake is in the oven right now, but I was wondering if anyone else had way too much cheesecake to fit in a 9 inch springform pan. I ended up with at least 2 1/2 cups of mix left that I had to put in a small dish to bake. If this turns out as good as everyone says, think I will use the 10 inch pan next time. Can't wait to taste this. Since I have to rate this before I taste it, may come back later to change rating. :-

    I no longer need to find the perfect cheesecake recipe. This is it. I followed the recipe as is (although I did melt the butter for the crust. My family loved it and I look forward to making it again. It was smooth and silky and absolute delicious.

    OMGosh, I made this cheese cake for my family for Christmas and it was absolutely delicious!!!! I will never buy another cheesecake this is it. I do have to say that my cake did crack but I don't think it was the recipe, this was my first attemp at a homemade cheesecake but this won't be my last. This will be the only recipe that I will every use....I also made the blueberry topping and it was pretty easy the cornstarch caked up a bit but I just removed those chunks and threw them out. Thanks Emeril who knew I had a cook inside of me :!!!

    This cheescake was a hit. Its even better than other cheescakes out there. Definitely going to make it again. Everyone was raving about it. Absolutely Delicious!
