Made this for Christmas dinner and for those who were a little on the fence where brussels sprouts are concerned, this recipe was the nudge needed to make them believers! Will make this again. Thanks Emeril!

because I like brussel sprouts, and this recipe covered up the flavor in a sugary taste (the maple syrup. The two tastes just didn't mesh.

When I saw Emeril prepare this on his show, I immediately checked to see if I had some sprouts on hand. Thought I did but I was wrong. So after work the next day, I picked some up and made those wonderful nutty Brussels sprouts. They were just as good as I had expected. I will be making these again. Soon.

When it comes to brussels sprouts I'm like a kid. "EEEEEEWWWWWWWW" But my daughter was watching Emeril and he made this Nutty Brussels Sprouts. She begged me to make it because its her all time favorite veggie. Now mind you she is only 7 years old. I made it, and it was not as bad as I thought. I'm not big on making brussels sprouts and limited to creating tastey sprouts but this was actually pretty good.

Well, I think its a little sweeping to say that no kids like brussels sprouts, Nicholas from Kalamazoo! Mine certainly do (in fact my daughter seems to prefer them to some of the other things on her plate!!, and they especially loved this recipe.

I used slightly less than the full tablespoon of shallots, and minced them extra-fine as I know the kids have complained about raw onions in meals before, but all the other flavours balance out the shallots so I could have probably got away with the full amount!

I used the honey & walnuts because that was what I had, and replaced the dijon with wholegrain mustard, which added a nice texture too. It was a great way to use up some of the walnut oil I bought a while back!

One tip for getting kids to like brussels is to choose small, very fresh ones, as they are less bitter, and do not, under any circumstances, overcook them! Also, cut them up a bit smaller (in half/quarters depending on size, as that will make sure they get well coated with whatever sauce they are served with. I have managed to get a child whose mother insisted he wouldn't eat brussels to eat them, without even doing anything especially fancy with them!

I have made this recipe several times. It's quick & easy. Everyone raved about it. I like the maple syrup better than the honey. Also I substituted sunflower oil for walnut. Love this recipe!

I used olive oil because I didn't have walnut oil then redcuced the amount of oil to 1/4 cup since I had less then 3 cups sprouts. They were excellent using maple syrup. I love b. sprouts and these were incredible!!! The dressing alone was delicious. Thanks Emeril for this awesome keep recipe!
