I have been baking for a long time. I was a little skeptical after some of the
reviews were less than favorable. I can see why now. The base of the
cookie bar was so dry and crumbly. It was not very good. It needed some
wetness to the dough to make it more moist. I had to throw the whole thing
out. I would not recommend this recipe. There are so many better ones
for cookie bars than this one.

i was kind of worried that they would turn out dry after reading some of the reviews and initially, they were not that great. major sadface. sooo i wrapped the dish in layers of saran wrap lol and waited until the next morning and omg they were soooooooooooo moist and delicious !! i brought them to my class and teachers and kids alike LOVED them. all day long it was "PLEASE MAKE THESE EVERY DAY!!" lol so thumbs up ! i'm making another batch tonight ! P.S. the only changes I made were adding lots of extra vanilla (3 TBSP. yes 3 TBSP, using 1/2 belgian milk chocolate and 1/2 belgian semi-sweet chocolate for the cookie and frosting, and omitting the marshmallows because, well, i'm not a huge fan of them. seriously took all my willpower to not eat the whole pan by myself lol.

This recipe is a great one for children. I served it to a group of adults and I think that children would have enjoyed them more.

I followed the recipe except the icing toppings (marshmallows & coconut flakeswere omitted. The cookie base was too crumbly. The frosting took 8 hours to stop being sticky. I served the bars during the holidays on platters with other cookies - and many were eaten, so they served their purpose.

This recipe worked well as a base for getting rid of some very ripe bananas and some peanut butter chips I had. Instead of using 2 sticks of unsalted butter, I used 1 stick and 3 bananas, then I reduced the sugars a little bit and increased the flour. I also used 3 egg whites left over from the key lime pie I made earlier as opposed to the 2 whole eggs. I added the chips and very lightly greased the pan. I also added about 15 more minutes of cooking time and the result was a cake-like cookie bar. Nuts would have made them perfect!
