at first i thought emeril , what are you doing ? thats a lot of cream cheese. most recipes only call for 1 or 1 1/2 lb of cream cheese this took 2 1/2 . it will probably just taste like a chunk of cream cheese. but WOW @!#@!## out of the park. should of never doubted the master. thanks emeril !!

This is an absolutely fantastic cheesecake. Words do not do it justice. One bit of advice, the water bath is absolutely essential. My German springform pan has a one inch lip around the base an is too big to put in any of my other pans. When bake without the water I've had trouble adjusting the temperature and time for good results. Still tastes great just doesn't look as good.

I've made this a couple of times and everyone loves it! It's rich and creamy but doesn't feel like it's weighing you down. My brother's friend ate 2 huge slices and now every time I see him, he asks me when I'm going to make this cheesecake again!

I will never bother with trying another cheesecake recipe after making this. I have made it a few times now. Everyone loves it. The Emerils.com website has better cooking instructions -- 12min at 500F and 1 hour at 200F, and you don't need to wrap the cake in foil and put it in a roasting pan with water (I had water leak into my cake once when I cooked it that way

I love this recipe. It's definately a family favorite! I just make the cheesecake plain and then for the topping...I just melt one jar of raspberry jam in the microwave and pour it over the top, when serving. Yummy!

This is the first recipe I ever used to make cheesecake and it's the only one I've ever used. My family, friends and co-workers request this cake all the time. This cheesecake is better than what you get at the cheesecake factory. I highly recommend it!

Who knew a cheescake was so easy to make?

This is far and away the best cheescake I have ever had.
