    I have always been afraid of Emeril's recipes, because they seem a lot more difficult. But this one was WORTH the time and effort. The BEST lamb I have ever had, and it was fun making it!

    One of the best Emeril recipes I've tried. The lamb was so tender and juicy. It was a hit with the whole family. Recipe was easy and simple too!!! Absolutely loved it!!

    Having never made lamb before, I was taking a chance on it for Easter dinner for the extended family. Directions were easy to follow and result was perfect. I'll be making this lamb recipe for many Easters to come. Major thanks for the successful recipe.

    I found the stuffing too salty. I used Kalamata olives as suggested by the recipe. The natural saltiness would have been enough. I would suggest not using the additional salt called for in the stuffing ingredients. I might even try using black olives next time -- to let the herbs come through more. Otherwise, the cooking time was spot on and the flavor was very good. The yogurt did a great job of tenderizing and the basting sauce helped the meat achieve a wonderful brown color.

    I served this recipe yesterday for my Easter Meal. It was devoured by everyone! What a wonderful flavor the stuffing and marinade gave to the lamb. My only suggestion would be to double the stuffing amount and bake it on the side as I ran out of it! It was wonderful. Thanks Emeril for another awesome recipe!

    I'm not the biggest fan of lamb, but I must say that this was a very easy succulent and tender Easter dinner. I'd make it again.

    This was a great, simple recipe to follow.I marinated overnight (8+ hrs.
    Rolled easily and roasted to a beautiful crisp crust. The stuffing was great. Everyone raved. So easy, would definitely make again. Delicious.

    This is, without a doubt, the best stuffed lamb recipe I have ever used. The flavors in the stuffing were perfect together. I did kick it up a notch, however, by sprinkling the stuffing with some crumbled feta cheese just before rolling it up. Thank you, Emeril, for another great recipe.
