    This seemed like a weird recipe for Emeril (looked more like Rachael Ray, but I had almost everything and decided to give it shot. Used a poblano pepper in the rice, because that's what I had, and brown instead of white rice. Otherwise, followed the recipe. I wanted a more gravy-like sauce, so I thickened it with a cornstarch flurry before adding back the chicken. It was a strange combination of ingredients, but it was tasty...very savory. I think I'd prefer it with fontina cheese if I ever make it again. The mozzarella really didn't add much except gooeyness.

    The recipe turned out really well. I cooked it for my fiance and I and he gave it an enthusiastic thumbs up! I omitted the mushrooms and peas because my fiancee doesn't like them and used french style green beans in the rice. I also used smoked paprika and chipotle chili powder in the essence seasoning and a little Chardonnay in the sauce for the chicken.

    This was a good meal. I used chicken drummettes b/c that's what I had. I just seasoned them with Essesnce and baked them, then added them into the pot after they were done. The broth and rice was so delicious I could have omitted the chicken. The bacon and green onions really gave it the BAM! you're looking for. The yellow bell peppers gave the rice a different flavor that really worked. I used mozzerella simply b/c it was cheaper, but will probably try fontina next time.

    I have made this dish before several years ago, and once again, was not at all disappointed! The bacon and mushroom flavors are superb alongside the Essence infused chicken and cheesy rice. You need the green onions and yellow peppers. If you make this dish, do not drop ingredients and you will be pleased with the outcome! Great dish for having company over.

    This dish had/has only 4 stars, with not a lot of people commenting, but I figured it was still Emeril, how can you go wrong...you can't! This dish was so good that my kids even loved it! Emeril is probably one of the best chef's on the planet! Amazing flavor and taste, I did it exactly as the recipe called.

    Made this dish for the parents and sister and it was great! Like my mom said though, wasn't really an Emeril, "Bam!" dish, but still great nonetheless. I didn't have any yellow peppers for the rice or green onions for the chicken, so maybe that was the bam factor? Hehe. I did love the combination of mushrooms, bacon, and thyme, very nice.

    How could ANYONE make a recipe that has Bayou Blast, extra black pepper, bacon, garlic, yellow AND green onions, yellow pepper, fresh thyme, and mushrooms in it an say it's BLAND?! You don't like it, OK, but there's NO WAY you could have used all the ingredients if your outcome was "bland." Have you ever tasted Bayou Blast?!

    I especially love the person who bothered to rate a recipe NEVER MADE with two stars because she didn't like the photo that Food Network printed with it! That's not the purpose of a recipe comments section. And if you simply think it's too tiresome or time consuming to chop the peppers, onions, and mushrooms, then heat up a Bertolli package meal and call it a day.

    This recipe was VERY tasty and quite easy to make. Thanks, Emeril, and please ignore the people who fail to follow your instructions and then insult you.
