    This just didn't work for me. He has you cooking the peppers and onions for over an hour......that creates some pretty broken down vegetables.

    I have no idea why this recipe got such rave reviews. We (four of us were very disappointed and I will never make this again. I'm an experienced cook so I know that wasn't the problem. I followed the recipe exactly, except for cutting back on the salt.

    I prepared the Essence with 1/3 the cayenne pepper and only added a pinch to the dish....it was yummy for me but my "super taster" daughter would never have eaten it.. I used veal stock that I had on hand instead of chicken and my round steak was grass-fed so did not require long cooking time. Very nice gravy. Will definitely make again but I'm thinking of either ancho chile powder or maybe some smokey paprika instead of the cayenne.

    The flour and cayenne combination as a coating for the meat before browning is genius. It preserved the tenderness of the meat inside in the final product. Seasonings were just right with a little bit of kick. This is one the simplest yet best tasting Emeril recipes yet. Guests loved it and left asking to email the recipe.

    Delicious! As luck would have it . . . I ran out of cayenne and used 1/4 tsp chipotle powder to season in the second round (vs 1/2 tsp cayenne. Turned out smokey, slightly spicy, and super flavorful. This recipe is a great way to stretch a dollar.

    Tasty way to use a cheap cut of meat. I made a few modifications:

    - ignored the salt measurement and seasoned to taste along the way
    - substituted beef broth for chicken broth
    - reduced cooking time by 15 min (this might have been because I only made 1/2 lb meat so it cooked faster
    - added 1/2 poblano pepper and omitted cayenne
    - served with tortilla instead of rice

    Would def make it again
