First made this Jul 2 2006.
Have made several times for guests. Everyone has raved about the taste. I save the tomato top and put as a cap on the stuffed tomato. The Tomato is put in the "fridge" for 2 hours to get nice and cool. Tomato is imbedded in a layer of stuffing on the salad plate, not only to provide stability but extra stuffing to enjoy.

Thank you Emeril for such a fine melding of flavors, textures, and simplicity. I have made this dish many times, and as a personal Chef, it is one of my most frequently requested dishes. Though I don't always stuff in the tomatoes, that is a wonderful presentation for a dinner party, while simply chopping the tomatoes and adding them is perfect for picnics and family style meals. Other welcome additions are slivered olives or a few capers. This is simple, easy and a joy to serve!

I love recipes that combine a variety of flavors to make the dish unique and wonderful. However, the addition of the mint and raisins went poorly with the other flavors- in my opinion. It is an attractive dish, but the taste was a disappointment and I ended up throwing the entire salad away rather than serve it. I know now to read the reviews and not just check for the number of stars in the rating- only one person had written the five star review.

Presentation is fun and colorful, taste is a wonderful mix of flavors. Recipe is easy to make and can be made ahead of time. My guests loved this recipe.
