Wonderful! My husband couldn't stop eating them. I didn't use Emeril's seasoning but something similar. The parmesan is a terrific finish.

I substituted with cubed red potatoes...absolutely wonderful. I substituted with another seasoning as well. I will be making these again.

Anytime a chef uses his own proprietary ingredient, it is all about selling his stuff, not about how the food tastes. Like most of Emeril's stuff, oddly spiced and needlessly complex.... I actually did try both, and Drummond wins hands down!
