I've been looking for the perfect oven fry recipe- and sorry, but this isn't it. They were edible because potatoes are always good, but it didn't turn out like I wanted. I had to cook them much longer to cook the inside (I used a fry-cutter, so I'm sure it wasn't b/c I was off on the size. They didn't look as golden all over as the picture. Also, the coating made the outer layer kind of chewy. It didn't let your teeth through neatly with each bite. I'm going back to just using olive oil, until I find the right recipe....

These are the only fries I will ever make again. My husband commented "I didn't know we had any frozen fries left" when he saw them (He loves McCain!. Who knew egg white could make such a difference! And a healthy one!

These are simple and much healthier than the frozen ones. ONE NOTE: On the show, Emeril says used an oiled sheet of parchment paper, in the recipe it just says use oil. Use the paper! It's murder on the fries scrapping them off the pan otherwise.

Loved it! Plus, it's less fattening since it's baked instead of fried.

Although I followed the recipe exactly on this one, the fries turned out to be limp and greasy rather than the crisp ones I expected.

Too salty, and I wouldn't use paprika next time.
