These fries were really tasty and are as good as if they were fried without the mess or the unhealthiness of frying. My only tip would be to slice the potatoes pretty thin (think shoestring since I found a thicker "steak fry" cut didn't cook all the way through. I also would vote for arranging them on the baking sheet THEN adding the Essence rather than trying to incorporate it into the egg white mixture. If you put the egg white in a plastic bag, it also makes coating the potato slices easier. Hope this helps!

This is an excellent recipe. I am from Putnam County, Fla., and in a little town close to our county called Hastings, Fl they are growing the new low carb potatoes. After trying this recipe, I will NEVER fry potatoes again, nor will I purchase frozen fries and bake them in the oven. These are incredibly delicious! The secret is in the egg whites - it makes an amazing coating that crisps up and is just yummmmmy!

I have tried many recipes for "no-fry" fries and they always tasted like baked potatoes. Not this one! The egg white coating crisps the outsides and they taste like really good "fried" fries. Wonderful for those of us on a low fat diet or just don't like the mess of frying.

These were the best home-cooked fries I ever had. They were light and moist inside, yet crisped on the outside. I have tried many recipes, but was left with either dried out wilted fries or the taste was just not worth the effort. You don't have to deep-fry to have great fries anymore.
