Oven Roasted Cauliflower

6 to 8 servings

  • 1 large cauliflower, about 2 pounds, cut into 1 1/2-inch flowerets
  • 1/3 cup extra-virgin olive oil
  • 2 1/2 tablespoons lemon juice
  • 1 1/2 teaspoons finely chopped fresh rosemary leaves
  • 1 1/4 teaspoons kosher salt
  • 1/2 teaspoon fresh cracked white pepper
  • 1 1/2 teaspoons minced garlic

Preheat the oven to 375 degrees F.

In a large bowl, combine all of the ingredients except the garlic. Toss to mix well and place in a large baking dish or shallow roasting pan. Place the pan in the oven and roast the cauliflower, turning once or twice, until tender and caramelized around the edges, 30 to 35 minutes. During the last 5 minutes of cooking, stir the garlic into the pan.

Remove the pan from the oven and serve immediately.

    Wonderful! The whole family loved it!
    I love roasted cauliflower & frequently make it on a higher heat~425~for about 20 minutes. I decided to try this recipe for a change & was pleasantly surprised. The only change that I made was that I substituted a Mediterranean seasoning blend for the rosemary & it was perfect with the wood smoked salmon & quinoa that I prepared. I did leave it in the oven for 35 minutes. The cauliflower was not carmelized as it usually is at a higher heat but, extremely tasty & tender. Next time I will add brussel sprouts to the roasting pan as suggested by another reviewer. Super easy & tasty side dish.
    I've been making this recipe since my low carb days...and it's awesome. I cut it differently though--slice the entire head close to 1/4 inch thick. You end up with lots of little bits, as well as tender larger pieces. These bits turn nicely brown and caramelized as the dish cooks. Also, you don't need 1/3 cup of oil. I can't stop eating this when I make it.

    Love this recipe! Upped the quantities of the seasonings just a bit and cooked according to the directions. Immediately after taking it out of the oven, I added green beans that had been boiled for a few minutes (so they were still crispy and mixed them with the cauliflower to coat and season. It was a great addition, adding some texture, color and of course another healthy veggie to the mix! 
    I made this for the first time, and I did what the other person did, I added Parmesan Cheese at the last moment. I added a little Meyer Lemon Oil i with the regular oil, but I used black pepper instead of the white pepper. I will make this again
    I added Parmesan cheese along with the garlic the last 5 minutes. Delicious!
    Tasted so delicious. A big hit; I wished I had made more. Easy to make. You don't have to use as much oil if you don't want to; adjust the amount to your liking. I used dried Rosemary, and powder white pepper - and it the taste was so awesome. This is a keeper!

    I've never made cauliflower (bad childhood experience--frozen cauliflower steamed to mush!, so I cautiously tried this. It was very tasty and much better than I expected. My teenage children -who have never had this vegetable yet said they definitely would not like it- actually liked it and said they would eat it again. 15 year old stood by the stove and ate a few more florets after dinner was over.     I tried this today for a snack and it was excellent. It was very easy to make. I didn't add rosemary, simply because I just didn't have any. However, it was excellent without it and I'm sure it is amazing with the rosemary. I will definitely be making this again in the future.
    This was super easy, and very good. Perfect blend of flavors, it is now our go-to recipe for roasted cauliflower. Perfect for a busy weeknight - takes little work but makes it look like you've spent all day in the kitchen slaving away.

    This recipe is amazingly good. I used about 1/2 the amount of oil, otherwise followed exactly. I make this about once week now.
    This is so easy to do, the worst part is cutting the Cauliflower up . After roasting add some shredded Pepper Jack cheese the last 5 min. MMMM
    I am surprised at the various negative reviews of this recipe. It was very tasty, smelled wonderful, healthy ingredients and so easy to make. It was enjoyed by all in my family!

    This is not a very good recipe. It isn't terrible either but I'd just try something else. It uses way too much oil and the temperature for the oven isn't high enough. About half would do. Maybe if you add more spicing it would help, some lemon zest or so. It's just pretty boring and way too oily.
    I was expecting to be blown away by this as others have mentioned. Not quite the case, although it was pretty decent. I noticed the cauliflower was still pretty crisp after after 35 minutes and was starting to dry out so I covered it with tin foil to let it steam up a bit. After 50 minutes it was at the right consistency so I took it out. I don't think I would make it this way again, I prefer to steam it and just add a little butter w/ salt and pepper or mash it up & add some thyme.
    Super Easy recipe!!! My kids loved it. Definitely a keeper.

    This is an extremely easy dish that goes with just about anything! Great flavor for a normally bland vegetable.
    WAY too crunchy for my taste. I prefer my roasted vegetables to have some "give" to them. This was nearly like eating raw cauliflower.
    I usually love Emeril's stuff, but I did not like this at all. I was very disappointed because of all of the great reviews.

    I absolutely loved this vegetable dish! I followed the recipe all the way but I used a half of a lemon instead of 2 tablespoons. I really like cooking with fresh Lemons. Thats why I picked this recipe. I made this with a small baked spiral cut ham and fresh cooked green beans with garlic! Yummo, everyone loved it. I will cook this again. Thanks Emeril.
    This is a great recipe and so easy. I added some chopped carrots for a bit of sweetness and color. It turned out great. My dinner guests were very pleased and I didn't have a single leftover. Thanks!
    Very easy to make as it cooked along with other oven items, & very tasty - my family doesn't usually care for cauliflower but all liked this version.
