    I have made these many times now and they are always a hit. I use kosher salt and that gives them a very nice taste. There are only 4 in my family and my 2 kids will eat a whole pound between them. Never any leftovers. My daughter thinks this is a great "guilt-free" recipe, healthy and no carbs!.

    They also love it when I coat them in Sesame oil and sprinkle on Sesame seeds with the kosher salt. I would love to hear of any other suggestions for this great simple recipe.

    Usually we just boil our green beans, but since we've had a ton from the garden, I decided to change it up. This was a great, simple alternative to boiling.

    This was really easy! It also tasted fresh. Not loaded down or extremely heavy. I would use a half a tea spoon of salt though, that way, you can accommodate guests watching their salt intake, while salting your own beans.

    Along with the great tasting salmon dinner, I was so delighted to try the string bean dish. A nice change from boiling the string beans and also much quicker (sometimes I over cook the beans in water. More importantly, the string beans had a better taste. Thank you again Emeril - you have proved once again that you are a top Chef !

    These green beans were a snap. Easy and super delicious. Even my non-green eaters cleaned their plates and asked for more. This was the first time I prepared freash green beans b/c we usually dont care for the chewiness factor. These (cooked a little longer than called for were not chewy at all. Just wonderful. These are now a regular at our house.

    I love roasting vegetables and never thought to roast green beans. The beans were crisp and had new depth of flavor that I never got from green beans. It's a simple dish that you can toss in the oven and forget about it as you prepare other things.
