    I cooked this last Christmas Eve for our family's Feast of the Seven Fish. I always do mostly old favorites and try one new dish and this was last year's standout (which is why I was looking it up right now. Very delicious, really easy and pretty quick! I did not use the tomato water but otherwise followed the recipe.

    Easy to make. I improvised. I didn't make "essence" but used some of the spices on the fish. Delicious and impressive looking dish.

    Absolutely fantastic! This is one of my what my husband likes to call "restaurant meals". Basically, it tastes like a delicious meal you'd pay $20+ for at a restaurant but was made at home for much less and executed by a home cook. So easy and very tasty. I used Old Bay seasoning instead of Essence because I had it on hand and the recipe turned out great. I'm making it this weekend for my husband, brother and dad for father's day. It's a great nice "special" meal that's easy to bring together for company.

    This was a delicious presentation for the snapper. My husband and I both loved the seasonings - from the fresh basil to the onions, tomatoes and herbed seasoning. I did use only one large (about 1 lb of snapper so increased my cooking time to about 25 minutes, which gave more time for the vegys to cook thoroughly. Did not use the tomato water. Had just the right amount of natural juices to put over the rice, which came out wonderfully fluffy and tasty. This is a keeper!

    I only made the red snapper, and it not only tasted great but looked pretty awesome too. There is no need for the tomato water - there is enough flavors going on as it. Some reviews said the veg topping wasn't cooked through, so I made sure to cut everything very thin and thought the veg was perfect. And I just bought a jar of Essence as opposed to making it. PS - I don't even like fish, but I will be making this again soon.

    SOOOO yummy! Will definitely make again. Reduced the cayenne pepper by 1/2 for my kids so it wouldn't be so spicy, and it had just enough kick. They loved it!
