    I made the mistake of using a stainless steel pan to saute the catfish. Most of the coating stuck to the pan, although the fish was still delicious. Obviously, a cast iron skillet is definitely a requirement in this recipe. The pan gets really hot and sears the coating so it doesn't pull away from the fish.

    I thought the recipe for the creamed corn was very tasty. I substituted frozen corn kernels, which worked out well. I might add a bit of sugar next time to sweeten it up, but overall a quick, simple and easy side dish.

    The recipe is fairly simple to follow which is great. It doesn't take very long and it was friendly enough for my kids to eat. I don't think mine turned out as nice as Emeril's but then again I haven't spent $80,000 learning how to cook either.

    An average dish at best. There is nothing remotely spectacular about it. Buttermilk and flour is nothing new with catfish. Stock instead of water for the corn will add a little more flavor. The potato salad is actually quite good, though.

    With respect to Mr. Lagasse, I actually MADE this recipe before submitting comment. Though previously not a huge fan of catfish, it was very good, as were the side dishes - a pleasant surprise!
